Dr. Sumei Hu embarked on her academic journey with a Bachelor's degree in Food Quality and Safety from the College of Food Science and Engineering at Shandong Agricultural University. She then pursued a Master's degree in Food Processing and Food Preservation at China Agricultural University and later earned a Ph.D. in Food and Nutrition Metabolomics from the Conway Institute, Institute of Food and Health, University College Dublin. During her academic pursuits, her focused on diverse aspects of food science, including the study of milk-derived bioactives and the quality changes of common carp during storage.

Following her academic achievements, Her engaged in various research roles. As a Ph.D. student, she worked in Prof. Lorraine Brennan's lab, investigating the effects of milk-derived bioactives on cellular function and metabolic profiles. Subsequently, she served as a Postdoctoral Researcher in Prof. John Speakman's group at the Institute of Genetics and Developmental Biology, Chinese Academy of Sciences. her continued her research in the investigation of genes affecting glucose control in mice and explored the impact of dietary macronutrients on body weight and adiposity.
